A Tribute To Mom: Cooking Without A Recipe + A Breakfast Skillet

So, if you ever had the pleasure of knowing my mom, you would know that she was an AMAZING cook. Going out to eat was usually a bit disappointing because my mom could usually prepare a better meal than the vast majority of places out there. Yes, we were super spoiled. We never ate just to fill our bodies with calories. It was always an experience to savor and a reason to connect with family and friends.

So naturally I always wanted to learn how to cook from her. My mom was excellent at a great many things, but unfortunately, patience was not one of her virtues. If she wasn't shooing us out of the kitchen, I would try to watch without getting in the way as she handled her ingredients like other artists would work with their paint or clay. One time she let me follow her around with a pen and paper to try to figure out how she created her culinary masterpieces. It went a little something like this:

Me: How much of that did you just put in?

Mom: I don't know. A half cup. Or maybe a cup.

Me: Well, what do I write down then?

Mom: I don't know the measurements. Just put enough in so it tastes good.

Me: {Blank stare}

And that's how I learned how to cook. A little of this; a little of that. It's one big experiment that you get better at with practice. Once you get the hang of it, it'll help you in those last days before your grocery store run where you need to get creative with what you have. Because, well, good luck finding a recipe that calls for sriracha, mayonnaise, kale and an egg.

Want to give it a go? Let's start with something easy. My mom always cooked breakfast for us. No cereal or pop tarts for this spoiled brat, and I've been a big breakfast person ever since. I love cooking these breakfast skillets with whatever is left in the fridge and then having enough for the next couple of days.

Breakfast Skillet Ingredients

Ingredients:

Onions

Garlic

Butter/Olive Oil

Sweet Potatoes/Regular Potatoes

Bell Peppers

Kale

Salt, Pepper, Cayenne and any other spices you have that might be yummy.

Notes:

*Put in one ingredient at a time starting with onions and garlic. I don't know if this actually makes a difference, but I feel like it does! After the onions and garlic, add the ingredients that will take the longest to cook first.

*Have zucchini, mushrooms, or any other veggies just hanging out in the fridge waiting to be eaten? Throw those in too! Sausage and eggs are also great additions if that's your thing. 

*Top with Greek yogurt which is fabulous as a sour cream substitute, hot sauce, avocado and/or cheese.
